Pumpkin Squares
As someone who believes all pie is good pie, but doesn’t always love a whole piece of pumpkin pie, these pumpkin squares are the perfect fall treat and another of our bite-sized treats that make a little dash of dessert guilt free.
Ingredients
- 1 box yellow cake mix
- 1/4 cup vegetable or canola oil
- 4 eggs
- 1 (16 oz) can pumpkin
- 1 (14 oz) can sweetened condensed milk
- 1 tsp almond extract
- 1/2 tsp cinnamon
- 1/2 tsp salt
Instructions
- Preheat oven to 350°F.
- Set aside 1/2 cup of the dry cake mix to use later.
- In a large bowl, combine the remaining cake mix, 1/4 cup oil, and 1 egg. Beat with a mixer until crumbly.
- Press crust firmly into the bottom of a greased 9x13 pan.
- In the same bowl, combine the 1/2 cup reserved cake mix, 3 eggs, 16 oz can of pumpkin, 14 oz can of sweetened condensed milk, 1 tsp almond extract, 1/2 tsp cinnamon, and 1/2 tsp salt. Mix well.
- Pour filling over the prepared crust and spread evenly.
- Bake 40–50 minutes depending on oven. Test with a cake tester — mine generally takes 45 minutes.
Tips
Store tightly covered and cut into squares. Enjoy as-is or with a bit of Reddi-wip. You’ll be making these every fall at the request of family and friends — just like we do.
